These threads are always matter of opinion....so here are mine:
720 - If you want the most technically advanced car with more "electric" feel...sound lacking, worst depreciation, horrible front aesthetics of the "dead eye socket" headlights
488 - if regular production, it's the latest, greatest F machine, wait in line...Ferrari game. Sound lacking vs 458. Aesthetics matter of opinion.
Performante - probably last of the NA V10 line, amazing sound, ALA aero, aggressive aesthetics (though not as much as SV Roadster)

I agree, looks are so subjective, I have heard/read a few comments from those at Geneva that said the 720s in person is incredible and than others say it's proportions are all off and the headlight design just ruins the car. Hard to form a concensus of which cars are better looking than others, but I do think the above comments are accurate and I would add:
720s - will be blisteringly fast, no doubt. I contemplated getting a 675LT a while back prior to the Performante and I will say McLaren definitely has the performance game dialed in if that's your thing. However, the lack of sound, the ultra smoothness of the shifts numb the driving experience for me. The sound of the revs climbing or a downshift is a critical element of the super car experience and their just leaving that out to me. Depreciation certainty alone makes it even more unattractive, later this year there will be dealer inventory cars with big discounts - guaranteed.
488 - personally does nothing for me, sure, we've all seen some cool specs, but I'd take a Speciale all day over a 488. More raw and exciting to look at. The 488 "Speciale" version is likely a few years away as Ferrari typically does 5 year life cycles for models with the Challenge Stradale/Scuderia/Speciale variant in the final year.
Performante - record solidifies its performance credentials, aggressiveness adds so much to the styling and simply makes a 580/610 flat out boring by comparison, ALA system technology makes all the kit car look alike wanna be's have far less substance, price for performance in the space with its competitors is a bargain, if you enjoy driving your Huracan - the Performante will dial everything up and this is coming from someone who went from a 550-2 to a Super Trofeo Stradale prior to my H. If your Lamborghini experience is being seen in a Lamborghini and going out to dinner or clubs, yeah, I too then would pass on the Performante and the price because Lamborghini's alone attract attention, no real one significantly more than the other to a significant magnitude unless your at specific car related functions.
